Easy recipe for classic New Zealand lolly cake Plus quick videoHere's a classic cake recipe that's popular in New Zealand, known as the "New Zealand Sponge Cake":

  • 4 large eggs
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • Butter or oil, for greasing the pan
  • Jam or whipped cream, for filling (optional)
  • Icing sugar, for dusting UnChristmas cake with toffee nut crunchInstructions:

  1. Preheat your oven to 180°C (350°F). Grease a round cake tin with butter or oil and set aside.
  2. In a large mixing bowl, beat the eggs and sugar together until light and fluffy. This usually takes about 5-7 minutes.
  3. Stir in the vanilla extract.
  4. In a separate bowl, sift the flour, baking powder, and salt together.
  5. Gradually add the dry ingredients to the egg mixture, alternating with the milk. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix, as this can result in a dense cake.
  6. Pour the batter into the prepared cake tin and smooth the top with a spatula.
  7. Bake in the preheated oven for approximately 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the tin for a few minutes before transferring it to a wire rack to cool completely.
  9. Once the cake has cooled, you can slice it in half horizontally and spread a layer of jam or whipped cream between the layers if desired. Alternatively, you can serve the cake as is or dust it with icing sugar.

The New Zealand Sponge Cake is light, fluffy, and delicious on its own or with a simple filling. Enjoy!
