Ingredients:

  • 3 cups cooked jasmine rice (preferably leftover and cooled)
  • 8-10 large shrimp, peeled and deveined
  • 8-10 small squid rings (cleaned and sliced)
  • 1 cup mussels (cleaned and debearded)
  • 1 cup chopped vegetables (carrots, green beans, peas, bell peppers, or any of your choice)
  • 3 cloves garlic, minced
  • 2 shallots, finely chopped
  • 2-3 red chili peppers, finely chopped (adjust to your desired level of spiciness)
  • 2 tablespoons vegetable oil
  • 1 tablespoon shrimp paste (terasi/belacan) or fish sauce (optional but adds depth of flavor)
  • 2 tablespoons sweet soy sauce (kecap manis)
  • 2 tablespoons regular soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon turmeric powder
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish
  • Fried shallots for garnish (optional)
  • Lime wedges for serving

Instructions:

  1. In a wok or large frying pan, heat the vegetable oil over medium-high heat.
  2. Add the chopped shallots, minced garlic, and red chili peppers to the hot oil. Stir-fry until fragrant and the shallots become translucent.
  3. Add the shrimp, squid rings, and mussels to the wok. Stir-fry until the seafood is cooked and tender. Remove the seafood from the wok and set aside.
  4. In the same wok, add a little more oil if needed and stir-fry the chopped vegetables until they are slightly tender but still crispy. Remove the vegetables from the wok and set aside.
  5. Lower the heat to medium, then add the shrimp paste (or fish sauce), ground coriander, ground cumin, and turmeric powder to the wok. Stir-fry for a minute or until the spices release their aroma.
  6. Add the cooked jasmine rice to the wok and mix it well with the spices.
  7. Pour the sweet soy sauce, regular soy sauce, and oyster sauce over the rice. Toss everything together until the rice is evenly coated with the sauces.
  8. Add the sugar, salt, and pepper to taste, adjusting the seasoning according to your preference.
  9. Return the cooked seafood and vegetables to the wok. Mix them gently with the fried rice until everything is combined.
  10. Remove the Nasi Goreng Seafood from the heat and garnish with fresh cilantro or parsley, and fried shallots if desired.
  11. Serve the Nasi Goreng Seafood hot with lime wedges on the side.
