Ingredients:

- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda

- Zest of 2 lemons
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup unsweetened almond milk (or any non-dairy milk)
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
For the lemon glaze:
- 1 cup powdered sugar
- 2 tablespoons freshly squeezed lemon juice
- Zest of 1 lemon (optional, for garnish)
Instructions:
- Preheat your oven to 180°C (350°F). Grease and flour a round cake pan.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a separate bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingers to release the lemon oils and create a fragrant mixture.
- Add the lemon juice, almond milk, vegetable oil, and vanilla extract to the bowl with the sugar mixture. Whisk until well combined.
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix.
- Transfer the batter to the prepared cake pan. Smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
- Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
- Drizzle the lemon glaze over the cooled cake, allowing it to drip down the sides. Sprinkle the lemon zest on top as a garnish if desired.
