  • 1 cup powdered sugar
  • 2 tablespoons freshly squeezed lemon juice
  • Zest of 1 lemon (optional, for garnish)

Vegan Lemon Cake


  1. Preheat your oven to 180°C (350°F). Grease and flour a round cake pan.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the granulated sugar and lemon zest. Rub the zest into the sugar with your fingers to release the lemon oils and create a fragrant mixture.
  4. Add the lemon juice, almond milk, vegetable oil, and vanilla extract to the bowl with the sugar mixture. Whisk until well combined.
  5. Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined. Be careful not to overmix.
  6. Transfer the batter to the prepared cake pan. Smooth the top with a spatula.
  7. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. While the cake is baking, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  9. Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
