Grilled Stuffed Squid (Inihaw na Pusit)

Ingredients:

  • 4 medium-sized squid
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup calamansi juice or lemon juice
  • 1/4 cup brown sugar
  • 1/2 cup minced onion
  • 1/2 cup minced tomatoes
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Bamboo skewers

  1. Clean the squid by removing the head, tentacles, and internal organs. Rinse thoroughly and pat dry.
  2. In a bowl, mix together soy sauce, vinegar, calamansi juice, brown sugar, minced onion, minced tomatoes, chopped green onions, salt, and pepper to make the marinade.
  3. Stuff the squid with the marinade mixture, making sure to leave some space for the stuffing to expand while cooking.
  4. Secure the squid with bamboo skewers to prevent the stuffing from falling out.
  5. Preheat the grill to medium-high heat.
  6. Grill the squid for 4-5 minutes on each side, or until the flesh turns opaque and the skin becomes slightly charred.
  7. Serve hot with steamed rice and a dipping sauce made from soy sauce, vinegar, and chopped onions.
