Spicy Beef Stir-Fry with Shishito Peppers
Ingredients:
- 12 ounces flank steak, sliced into thin strips
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine (or dry sherry)
- 1 teaspoon cornstarch
- 1/2 teaspoon sesame oil
- 1/4 teaspoon ground white pepper
- 2 tablespoons vegetable oil
- 1/2 medium onion, sliced
- 2 cloves garlic, minced
- 1/2-inch piece fresh ginger, minced
- 8-10 shishito peppers (or other mild chili peppers)
- 1/2 teaspoon sugar
- 1 tablespoon chili bean sauce (Toban Djan)
- 2 tablespoons oyster sauce
- 1/4 cup low sodium chicken broth
- 1 scallion, chopped (for garnish)
Instructions:
- In a bowl, combine the sliced beef, soy sauce, Shaoxing wine, cornstarch, sesame oil, and ground white pepper. Mix well and set aside to marinate for at least 15 minutes.
- Heat a wok or large skillet over high heat until smoking. Add 1 tablespoon of vegetable oil and swirl to coat the wok/skillet.
- Add the marinated beef to the wok/skillet and spread it out in an even layer. Let it sear for about 30 seconds without stirring, then stir-fry for another minute or until the beef is browned. Transfer the beef to a plate and set aside.
- Add the remaining tablespoon of vegetable oil to the wok/skillet. Add the sliced onion, minced garlic, and minced ginger. Stir-fry for about 1 minute until fragrant and the onion begins to soften.
- Add the shishito peppers to the wok/skillet and stir-fry for another 1-2 minutes until they start to blister.
- Add the sugar, chili bean sauce, oyster sauce, and chicken broth to the wok/skillet. Stir everything together to combine.
- Return the seared beef to the wok/skillet and stir-fry for an additional 1-2 minutes until the beef is cooked through and coated in the sauce.
- Garnish with chopped scallions and serve your spicy beef stir-fry with steamed rice or noodles.
